Baked Eggs with Cheese

Ingredients

  • 6 eggs
  • 1 large onion (chopped)
  • 2 tomatoes (chopped)
  • 1 medium size leak (chopped)
  • 2 green onions (chopped)
  • 100 grams of shredded gruyere cheese
  • 1/2 cup of whole milk
  • 4 table spoons of butter
  • Salt, pepper, oregano and garlic powder to taste
  • Red chili flakes to taste (optional)

Preparation

Preheat oven to 400 degrees Fahrenheit. Add chopped ingredients (onion, tomatoes, leak and green onions) into a large glass Pyrex and mix them so they are evenly distributed. Season with salt, garlic powder and oregano (if desired, add red chili flakes for a spicy kick). Crack the eggs directly over ingredients (sunny side up) making sure they are evenly distributed. Add a touch of salt and pepper to each egg yolk. Pour the milk over the ingredients and distribute small slices of butter on top. Cover with the shredded gruyere cheese and cover the Pyrex with aluminum foil. Bake for 25 to 30 minutes, remove the aluminum foil and broil for an additional 10 minutes. Remove from oven and set aside to cool for 5 minutes before serving.

Serving suggestion: top with sour cream and "pico de gallo" and serve with sour dough bread.

Servings and Preparation Time. This recipe serves 6 and requires about 40 to 50 minutes to be prepared.
