Veggie Burger with Asparagus and Brussel Sprouts

Ingredients

    For the Veggie Patties:
  • 1 can of cooked black beans
  • 1/2 cup of cooked quinoa
  • 1 beaten egg
  • 2 spoons of grape seed oil
  • salt, pepper, cumin and turmeric to taste
  • garlic powder and chili flakes to taste (optional)
    For the Burgers:
  • 4 whole wheat burger buns
  • 4 slices of Muenster cheese (optional)
  • 4 big leaves of lettuce
  • 1 sliced red onion
  • 1 large sliced tomato
  • mayonnaise, mustard and ketchup to taste
    For the sides:
  • 200 grams of asparagus
  • 200 grams of Brussels sprouts
  • 2 spoons of olive oil
  • 1 spoon of manuka honey
  • salt and pepper to taste

Preparation

Wash and cut Brussels sprouts in halves. Mix the sprouts with the olive oil, manuka honey and salt to taste. Distribute the sprouts into a flat baking pan and put them into the oven at 350F for 30 to 40 minutes. Add the asparagus during the last 10 to 15 minutes.

Drain all water from the cooked beans and mash them with a fork or potato masher until obtaining an uneven dough of mashed beans. (Avoid reaching the point of having a cream of beans). Mix the mashed beans with the cooked quinoa until you obtain a uniform mixture. Add all seasoning spices salt, pepper, cumin and turmeric (as well as the optional garlic powder and chili flakes if desired) to taste. Mix continuously to evenly distribute the spices. Add the beaten egg to the mixture and knead it until the egg has been completely incorporated into the mixture.

In a very hot large skillet, brush the grape seed oil to the hot surface and pour large serving spoons of the mixture pressing on them to give the patties a round shape as small pancakes. Cook for five to seven minutes and turn them over with a flat spatula. (The patties might break when turned over, but do not worry, you can press the pieces together with the spatule and they will rejoin). Turn the patties over again after five to seven more minutes. Continue cooking until the patties are dry, turning them over again and again every one or two minutes. (The patties are ready when they are dry and do not break anymore during turn overs).

Build your burgers in the whole wheat buns. (If cheese is wanted, start with a slice of Muenster cheese in the bottom). Add the black been with quinoa patty, onion, tomato and lettuce and your favorite sauce combination. Serve your burger in a dish with the asparagus and Brussels sprouts as sides.

Additional Information

Servings and Preparation Time. This recipe serves 4 persons and requires about 40 to 60 minutes to be prepared.

Pairing suggestions. Best if served with a glass of IPA Beer. If wine is preferred, a glass of Merlot is a must!
